Place the eggplant slices in the pan and cook for 2 to 3 minutes or until slightly browned. Flip them over and cook for a few more minutes. 1 Make the Miso Glaze: Combine soy sauce, mirin, sugar, and miso paste in a small pot and heat gradually until it boils.
