long pasta

tbsp Miso Soybean Paste

cup soy milk
cup cream

6 Prepare the Ingredients: Wash the spinach and cut it into bite-sized pieces. Trim the ends of the shimeji mushrooms and separate them into each piece. 3 Make the Miso Cream Sauce: In a small bowl, whisk together the miso paste, soy milk, and cream until smooth. Set aside. 1 Cook the Pasta: Fill a large pot with water, add the salt, and bring it to a boil. Cook the pasta according to the package instructions. Reserve some pasta cooking water, then drain the pasta. 7 Stir-Fry the Vegetables: Heat a frying pan over medium heat and add olive oil. Sauté the spinach and shimeji mushrooms for a few minutes until tender. 8 Combine Everything: Pour the miso cream sauce into the pan and gently simmer it. Add the cooked pasta and toss well to coat.
