For The Miso Glaze
Cut Eggplant: Remove the stem of the eggplant and cut it into round slices.
Cook Eggplant: Heat a frying pan over medium heat and add the oil. Place the eggplant slices in the pan and cook for 2 to 3 minutes or until slightly browned. Flip them over and cook for a few more minutes.
Make the Miso Glaze: Combine soy sauce, mirin, sugar, and miso paste in a small pot and heat gradually until it boils. (or microwave it)
Serve: Place the eggplant slices to a serving plate, pour the miso glaze over, and sprinkle sesame seeds.
