Prepare the Vegetables: Finely mince the onion and bell peppers.
Stir-Fry the Ingredients: Heat a frying pan over medium heat and add the vegetable oil. Add the onions and bell peppers, and stir-fry until soft. Add the chickpeas to the pan and stir-fry for a few more minutes.
