Prepare the Ingredients: Press the tofu for 30 minutes to an hour to remove excess water. Drain and cut the tofu into 1 cm (0.5 inch) thick slices. Clean and slice the mushrooms into bite-sized pieces.
Stir-Fry the Mushrooms: Heat oil in a frying pan over medium heat. Add the mushrooms, season with salt and pepper, and cook until they are tender and browned. Once done, transfer the mushrooms to a plate.
Pan-fry the Tofu: Lightly coat the tofu slices in flour on both sides. In the same pan, add oil and fry the tofu over medium heat for about 2 minutes per side, or until golden brown and crispy. Transfer the tofu to a plate.
Make the Teriyaki Sauce: In the same pan, add mirin and soy sauce. Stir to combine and bring the mixture to a gentle boil. Let it cook for 1-2 minutes until it thickens slightly.
Combine the Tofu and Sauce: Return the tofu to the pan and toss gently to coat it in the sauce. Cook for another 1-2 minutes, allowing the tofu to absorb the sauce.
Serve: Plate the tofu, top with the stir-fried mushrooms, and sprinkle with chopped scallions. Serve and enjoy!
