This baked tofu with cheese is a comforting dish with creamy tofu, a rich miso flavor, melted cheese, and plenty of vegetables. It’s the perfect choice for a light, flavorful vegetarian meal!

Prepare the Ingredients: Slice the potatoes thinly and microwave for 2 minutes. Thinly slice the onion.
Make the Tofu Cream: Whisk the tofu until smooth in a large bowl. Add the soy milk and white miso, then mix until creamy, and season with salt and pepper.
Stir-Fry: Heat butter in a frying pan over low heat. Add the onion and cook until soft. Add the green peas and potatoes, then stir-fry for a few minutes. Pour the tofu cream and mix well.
Bake: Transfer everything to a baking dish. Sprinkle with plenty of shredded cheese on top. Bake at 180°C (350°F) for 10 minutes.
